Purple teas are teas made from leaves that are high in anthocyanin. This can occur naturally, particularly in the low latitude, high altitude regions of Southern Asia, where tea plants produce the anthocyanin as protection from UV rays. The purple leaves can also be bred intentionally. In either case, the purple teas have a certain sweetness about them and a faintly spicy lavender aroma. They produce beautifully purple hued liquor.
