Notes:
Pai Mu Tan (also known as Bai Mudan and White Peony) is a classic style of white tea originating from Fujian, China. Unlike many white teas (such as the Swirling Mists), which only use the bud, the Pai Mu Tan uses also the leaves on the tea plant. This gives it a fuller flavour and body, and also makes it a more affordable white tea. This particular Pai Mu Tan is from the neighbouring province of Zhejiang.

White tea undergoes the most minimal processing of all the teas – it is usually plucked and sun-withered, and undergoes a small amount of natural oxidisation during its exposure to the air after plucking. However a lot of skill and experience is required to make the white tea to ensure the correct levels of moisture and oxidisation are reached. In addition, white teas usually have a short season.
