Given white tea's minimal processing, it is likely that it was the first tea to be drunk all those thousands of years ago in China. Even so, this does not make them easy to produce. They need just the right weather conditions, and have a short harvest period. A great deal of skill is required to perfect the level of oxidisation that takes place. White teas can consist of the bud only - such as Jasmine Silver Needle or the bud and top two leaves - such as Pai Mu Tan.
